Grandmother was the best biscuit maker this side of the Mississippi.
 

You have to understand the way I cook. I rarely ever use a measuring cup and I cook in large quantities.  I use the FoodSaver vacuum sealer to freeze the extras for other meal entries or individual meals for lunch.

Beef Stew

Place beef chunks or roast in a crock pot
2 cn Campbell's Beefy Mushroom soup
1 cn Campbell's cream of Celery
1 Chopped Onion
Cook 6-8 hours
Serve with mashed potatoes
 

Salsa Chicken

Place chicken of choice in crock pot
several whole pealed small potatoes
Carrots
1qt Pace Salsa
Cook 6-8 hours
Serve with rice

Catfish Stew

2 #10 cans of diced tomatoes
1 can of baby lima beans
2 can whole kernel corn
1 can of cut okra
2 diced potatoes
3 lb of diced Catfish
2 tbls salt
2 tbls pepper
6-8 tbls chili powder
Slow cook in large pot 4 hours

Chicken Alfredo

Mix in casserole dish
12oz boiled noodles (I like egg noodles)
2 12oz cans of chunk chicken breast
1 16oz jar of alfredo sauce
1 tbls salt
Pinch of garlic & herb
Microwave for 8-10 minutes

Bar-B-Q Sandwich

The bun has to be  lightly toasted
Add a layer of bar-b-q meat
Top with BBQ slaw

Bar-B-Q Meat

Cook 2 Boston Butts at a time, you may want to only do one.
Its as simple as placing them in the oven 250 for 6-8 hours
I have also used a large crock pot overnight
The meat is done when if falls apart.
Best when cooked on a broiling pan in the oven.
The meat should be torn apart or chopped, if the meat is done its easy.

The best sauce I have found is the Sonny's brand which I get a Sams Wholesale.

Bar-B-Q Slaw

Grate
1 Head of Cabbage
8oz Sharp Cheese
4 Dill Pickles

Stir in
1/3 Cup of Mustard
1 Cup of Mayo
1 tbls Salt
1 tbls Pepper
4 tbls Chili Powder
8 to 16 oz Ketchup
Add more Ketchup as necessary until the mixture becomes loose

 

BBQ Hash

In a pressure cooker cook a large boston butt roast for one hour then let cool to open the cooker.

Add 4lbs of large potatoes & 4lbs of peeled onions.

Cook for 15 mins.

Using a meat grinder, grind the meat, potatoes & onions.

Mix in 20oz of ketchup.

Cook for 2 hours on med to low heat & add the juice from the pressure cooker

as needed to keep a loose texture.

Add salt, pepper & liquid smoke to taste. 

 

 

Sausage Balls
Mix 3lbs of sausage
20 oz of Bisquick
16 to 20 oz of sharp grated cheese
Roll into one inch balls

Spray a cookie sheet with Pam

Cook at 350 until golden brown

 

40 Pounds of Lasagna

4 large aluminum pans  (for chafing dish warmers aprox. 12" x 24" x 4" deep)

5lb Hot Jimmy Dean Sausage

5lb Hamburger

2 Large Boxes of Lasagna Noodles

4 14oz Cans of Diced Tomatoes

1 Large Onion

4lb Shredded Mozzarella Cheese

4lb Shredded Sharpe Cheese

2 2lb Containers of Ricotta Cheese

2 1.5 lbs of Cottage Cheese

1 Container of Tomato & Basil Feta Cheese

1 Extra Large Parmesan Cheese

3 Extra Large Spaghetti Sauce

 

Boil Noodles in large pot with salt added.

Brown sausage, hamburger, diced onion, salt & pepper. Drain well & mix with diced tomatoes & spaghetti sauce. Add basil or other spices.

Double the 4 pans to 2, so they can be picked up without collapsing.

First spread the meat sauce just to cover the bottom of the two pans then a layer of noodles.

A layer of sharpe cheese and a layer of noodles.

Mix the cottage, ricotta & feta cheeses in a large bowl, then layer in the pans, then another layer of noodles.

Add a layer of meat sauce, then noodles, then Mozzarella then noodles.

For the final layer add meat sauce then top with grated parmesan.

Bake at 325 for 3 hours or until the top is brown.
